MOROCCAN MEATBALLS & COUSCOUS

Sometimes I make meals on impulse & without any real planning. This meal came about one Saturday evening after I got home from football. I had it in my mind that meatballs was the way forward, but little did I know that a simple saturday night dinner was to change into a ras el hanout inspired moroccan delight, complete with a fragant cous cous recipe.

Ingredients: (Moroccan Meatballs)

  • 500g Lamb Mince
  • 1 Onion (Finely Chopped)
  • 3 Garlic Cloves (Finely Chopped)
  • 1 Tbsp Dried Chilli Flakes
  • 2 Tbsp Ground Cumin
  • 1 Tbsp Ground Cinnamon
  • 1cm Chunk Of Garlic (Grated)
  • 500g Passata
  • 2 Tbsp Ras El Hanout Paste
  • Freshly Chopped Coriander
  • Handful Of Pine Nuts (Lightly Toasted)

Ingredients (Cous Cous)

  • 200g Cous Cous
  • 300ml Vegetable Stock
  • Freshly Chopped Coriander
  • 50g Raisins
  • 1 Carrot (Finely Chopped)
  • 1 Tbsp Tomato Puree

Method:

  1. Put the lamb, onion, 1 garlic clove, ginger and the spices in a bowl and season well. Mix  and form into little meatballs about the size of a ping pong ball.
  2. Heat 1 tbsp olive oil in a large non-stick pan and add the meatballs in batches, frying until browned all over. scoop out, then add the rest of the garlic, onion, chilli flakes and ras el hanout and cook for 5 minutes over a low heat.
  3. Add the passata and season well. Simmer for 15 minutes, then add back the meatballs and cook for another 20 minutes until sauce has thickened. 
  4. To make the couscous put it into a bowl along with the raisins and pour over the stock, just enough to cover the surface of the cous cous. Cover with cling film or a tea towel and leave for 10 minutes.
  5. After 10 minutes, fluff the cous cous then add the tomato puree, carrots, coriander and mix well.
  6. Stir the herbs through the meatballs and serve with the cous cous.
