FULL ENGLISH CRUMPETS
When a full English breakfast, sounds a bit too heavy, but a buttered slice or toast or a crumpet just won't do. I give you the Full English Crumpet. Bacon, sausage, beans, egg & a couple of hidden hash browns. The perfect way to start off a weekend.
Ingredients: (Serves 2)
- 6 Rasher Unsmoked Streaky Bacon
- 6 Pork Chipolatas Sausages
- 4 Hash Browns
- Baked Beans (I Used Branston)
- 1 Onion (Sliced)
- Dash Of Tabasco & Worcestershire Sauce
- 1/2 Tsp Smoked Paprika
- Black Pepper (To Taste)
- 30g Butter
- 2 Eggs
- 4 Crumpets
Heat the grill to the highest setting. Spread the sausages & hash browns out on a baking tray and grill for 5 mins. After 5 mins add the bacon and grill for a further 5 minutes until both the bacon & sausages are cooked.
Add the butter to a saucepan over a medium/ high heat until foaming. Add the onions and fry for a few minutes until soft. Reduce the heat and add the beans, tabasco, worcestershire sauce, paprika & black pepper. Leave to cook through.
Fry the eggs in the oil. I like mine runny, but this is up to you.
Grill/ toast the crumpets. Divide the bacon, sausages, hash brown and beans between 2 of the crumpets, top each with a fried egg, then place the lid on top.
